Ingredients:
1 lb Squid (fresh, cleaned, and cut into bite size pieces)
1 lb Mustard green (cut into 1-inch x 2-inch pieces)
2 large tomatoes (each cut into 6 wedges)
1 bundle Green onion (cut into 2-inch length)
3 stalks Celery (cut diagonal into 1/2-inch wide pieces)
3 Clove Garlic (minced)

1 tsp sugar
3 tbsps Fish sauce
3 tbsps Cooking oil

Preparation:
1. Using a bowl, combine the squid with 2 garlic minced garlic cloves, 2 tsps fish sauce, and 1 tsp sugar, and marinade in refrigerator for 30 - 45 minutes. 

2. Mean while, prepare the vegetables as directed above.   When ready to cook, bring 2 tbsps cooking oil to hot in a skillet over high heat.   Add the squid and sauté for about 30 seconds.  (Do not over cooked the squid or it will be very chewy).  Transfer the squid to a plate and set aside. 

3. Using the same skillet, add 1 tbsp cooking oil and bring to hot.  Add the garlic and stir-fry for 10 seconds.  Add the vegetables and stir-fry for 2 minutes.  Reduce heat to medium.  Stir in on tbsp fish sauce then the squid and mix well. 

4. Transfer the plate and serve hot.  Garnish with cilantro and some black grounded pepper.
