Chicken with Zucchini and Green Onion Bites Of Asia Yield: 3 Servings Ingredients: 1/2 lb Chicken breast (cut into bite size pieces) 1 med. Zucchini 1 bundle Green onion (cut into 2 inch lengths) 1 clove Garlic (minced) 2 tsps Fish sauce 1/2 tsp salt 1/4 tsp pepper 2 tbsps Vegetable oil 1/4 cup chicken stock or water 1 tsp Corn starch mix with 2 tbsps of water Preparation: 2. Mean while, wash the zucchini, cut in half lengthwise, and then cut each half into 2 inch thick pieces. Cut the green onion into 2 inch lengths. 3. When ready to cut, bring 2 tbsps cooking oil to hot in a wok or skillet. Add garlic and stir for 10 seconds. Then add chicken and cook for 3-4 minutes on medium heat. Add chicken broth and cook for another 2 minutes. 4. Add the vegetables, cover, and cook for 2 minutes. Remove the cover, mix well and slowly stir in cornstarch mix. Slowly mix till sauce thicken. Turn off heat and serve with steam rice. |
