Cold Pig's Trotters
(Yield: 4 Servings)

Ingredients:
1 boneless salted pig's trotter
1 dish shredded ginger
1 dish red vinegar

---Seasoning---
1 tbsp salt
1/2 tbsp sugar
2 slices ginger
1 spring onion
2 tbsp wine
1 tsp peppercorns
2 star anises
2 fennel seeds

Preparation:
1. Wash and parboil pig's trotter for 15 minutes. Rinse well.

2. Boil up 5 cups of water with seasoning. Add in pig's trotter and bring to boil. Then simmer over low heat for about an hour until tender.

3. Dish pig's trotter on a deep plate.

4. Discard ginger, spring onion, pepper-corns, star anises and fennel seeds from sauce. Pour sauce inside plate of pig's trotter. Cool aside. Chill in refrigerator for 8 hours. Then cut into pieces and serve with red vinegar and shredded ginger.

For marinating pig's trotter, salt and salt petre must be added. They are omitted in this recipe because the meat is replaced by salted pig's trotter.
