Zucchini Bread

For This RecipeIngredients:
3 cups Shredded zucchini(it is about 3 medium zucchinis)
1 2/3 cups Sugar
2/3 cup Vegetable oil
2 tsps Vanilla
4 Eggs
3 cups Whole wheat flour
1 tsp Salt
2 tsps Baking soda
1/2 tsp Baking powder
1 tsp Ground cinnamon
1/2 tsp Ground cloves
Preparation:
(if you desire, you could put 1/2 cup of chopped nuts or 1/2 cup of raisins)
1. Heat oven to 350°F. Grease bottoms only of 2 loaf pans(9
* 5 * 3 inches).
2. Mix Zucchini, sugar, oil, vanilla and eggs in large bowl.
Stir in remaining
ingredients. Pour into pans. Bake 50 to 60 minutes or until you think it looks good. Cool
for 10 minutes Loosen sides of loaves and remove from the pans. |
