Beef with Asparagus & Black Bean

(Yield: 4 Servings)

Ingredients:
1/2 lb Beef (thinly sliced)
1 lb Asparagus (cut 2 inches long)
1 ts Cornstarch dissolved in 1/3 c water
1 tb Chinese fermented black beans, minced with:
4 Cloves Garlic (minced)
1 tsp Rice wine
2 tsps Soy sauce
2 tsps cooking oil
1 tsp rice wine

Marinating Sauce
1 ts Cornstarch
1 ts Soy sauce
1/2 ts Rice wine
1/2 ts Sugar
1/2 ts Salt

Preparation:
1. In a bowl, combine the beef and the marinating sauce, mix thoroughly and set aside for 1/2 to 1 hour.

2. When ready, heat 1 tablespoon cooking oil over high heat, stir in asparagus.   Add 1/4 cup water and 1/2 teaspoon salt.   Cover pan for 2 minutes.   After 2 minutes, remove asparagus to a platter and set aside.

3. Over high heat, add 1 tablespoon of oil.  Stir-fry the black beans and garlic mixture.  Stir for a few seconds.  Add the beef.  Stir-fry quickly for 2 minutes.  Do not overcook or the beef will become tough. Add 1 tsp of rice wine and 2 tsps of soy sauce.  Stir in asparagus.
 
4. Add cornstarch mixture.  Stir 10 seconds or until thickened.  Serve hot.
